Low Carb Cinnamon Rolls

Before Keto, I used to love making a can of cinnamon rolls. A warm cinnamon roll (or 3) and a hot cup of coffee was the perfect breakfast for a relaxing Saturday morning. Obviously, traditional cinnamon rolls are now a thing of the past, and bread and sugar are big no-nos. I had been seeing recipes for low carb cinnamon rolls for a while, and had several saved with the idea of making some one day. That day ended up being St. Patrick's Day. We had originally planned to go hiking, but the weather forecast had enough chance of rain that we decided not to chance it. The eldest went to spend the day with her grandparents, so we had the option NOT to visit Dunkin Donuts for breakfast (that's the only place Abbi wants to eat on Saturday mornings). Weekends and Self Control

It's been awhile since I made a post, and although nobody is reading this just yet, it's time to come clean. Weekends are a huge struggle for me. It's much easier to eat right on the weekdays, when I have to bring my own food to work and I only have one option for dinner (an option I shop for, so I can control what it is). Weekends, however, are a whole different ballgame. We rarely eat at home, so I have much less control over what food I'm around. Breakfast is almost always at Dunkin Donuts because that's Abbi's favorite breakfast spot. I usually ok there- a good cup of coffee and the guts of a sandwich (either bacon and eggs or chicken salad) are satisfying enough that I'm not usually tempted to eat a donut (although, there are still times when they have a new flavor and the temptation is too strong- but at least Chase and I split one, so it isn't as much of a carb bomb if I only eat half). Cheesecake for Breakfast

Breakfast on Keto is especially tricky. You don't realize how carb-ladden the first meal of the day can be until you try to take all the carbs off. Cereal's out as are toast, donuts, oatmeal, bagels, and most smoothies (unless you have time to make Keto versions of those items, which I do on occasion). Most pre-made options and frozen meals are out (potatoes everywhere!), even fast food isn't a good choice unless you're willing to throw away perfectly good biscuits or wraps just to eat the filling inside (which I also do, although I hate wasting food). A few restaurants like Krystals offer low carb options, but they're expensive and eating the same thing gets old fast. There's always the option to make something fresh each morning, but with 2 kids to get up, ready, and out the door, that's not a viable option for me. Taco Monday

I know it's supposed to be Taco Tuesday, but tacos are an every day food and this week it happened to be Monday. Given that I eat no grains, any sort of taco shell you can buy at the store is out. I could just make a taco salad with meat, veggies, and toppings, but sometimes you just want that extra crunch. I had seen an idea on several FB groups and Pintrest for cheese shell tacos. Cheese is surprisingly versatile- you can make all kinds of LCHF friendly swaps with cheese (pizza crust, chips, taco shells, etc). To make the cups we decided to make Monday night, you start off with your favorite cheese. I made mini cups, so shredded cheese worked great, but if you want a larger cup you might want to use sliced cheese. I greased a baking sheet well and made 12 little piles of cheese. Then I popped it in the oven on broil. The cheese is going to melt, but don't pull it just yet. After melting comes bubbly. You want to wait until the whole pile is starting to brown, but before

My journey begins

After my diagnosis, I was looking on FB for a couple of Type II groups to join, sort of an online support group type thing. I found and joined several and I noticed that most of them encouraged a low carb high fat (LCHF) way of eating. Basically, the idea is to eat VERY low carb (generally less than 30g PER DAY) and high in healthy fat so that your body will switch from burning carbs for energy to burning fat instead. Not only does it provide much better control for your blood sugar, it also usually helps with weight loss.  Here's  a website that explains it if you're interested. LCHF is one term, you may also know it as Keto or Ketogenic eating. The hardest part of what I found out is that most of the foods I loved most were on the no-no list...no grains, beans/legumes, fruit, starchy veggies, or any form of sugar. I wasn't sure I could completely cut those things from my diet- I love bread and I have a very bad sweet tooth...the idea of not eating those things any longe

Backstory (long!)

I supposed it's fitting that I should start this blog on a day that is probably one of the biggest money makers for the candy companies. As I write this, there are several delicious pieces of chocolate sitting here beside me, taunting me. As one of my favorite songs from The Sound of Music says, let's start at the very beginning. In this case, I'm referring to the beginning of why I started this journey, and ultimately this blog. It all started when I found out I was pregnant with Abbi. At my first appt, around 6 weeks, they discovered I had protein in my urine and high blood sugar. At that time I was diagnosed with a suspicion of Type II (but they weren't able to conclusively rule out early onset Gestation Diabetes, which my Mother had a history of). We wouldn't know anything for sure until after Abbi was born. I followed the American Diabetes Association diet, which was 30g carbs for breakfast, 45-60g for lunch, 45g for dinner, and at least 2 snacks of 15g carbs
